Pomegranate Salsa



12 oz fresh cranberries blended fine in food processor
1/4 c green onion chopped
1/4 c cilantro chopped
1 small jalepeno chopped
1 1/4 c sugar
1/4 teas cumin
2 Tbl lemon juice
Pomegranate 

Mix all let sit (4 hours or so) before serving so flavors can meld.

Breakfast Quiche

Layer good quality frozen hashbrowns in a 9x13 pan 1 1/2 - 2 inches deep.  Cook in 400 degree oven until dry (about 20 minutes)

Layer with filling of choice - i.e. ham, cheese, peppers.

Pour 1/2 C. melted butter over the top

10-12 eggs
1 C cream or milk
about a teas of seasoning salt (depending on the saltiness of the filling)
salt and pepper to taste

Mix and pour over the top

Bake at 375 for 30-45 minutes.

SOFT PUMPKIN SUGAR COOKIES WITH CARAMEL CREAM CHEESE FROSTING
 
These will be some of THE BEST pumpkin cookies you ever try! The frosting on top is out of this world and the perfect compliment to these delicious cookies!

INGREDIENTS
  • ½ cup butter, softened
  • ¾ cup powdered sugar
  • ½ cup sugar
  • ½ cup vegetable oil
  • 1 egg yolk
  • 1 teaspoon vanilla
  • ½ cup pumpkin puree, NOT filling
  • 2½ cups flour
  • ½ teaspoon cream of tartar
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ¾ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ginger
  • ¼ teaspoon cloves
Caramel Cream Cheese Frosting
  • 8 ounces cream cheese, softened
  • 4 cups powdered sugar
  • ¼ cup caramel ice cream topping
  • ¼ teaspoon salt
INSTRUCTIONS
  1. Preheat oven to 350 degrees F.
  2. In a large mixing bowl, cream butter, powdered sugar and sugar together. Add oil, egg yolk, vanilla, and pumpkin puree and mix well. Add flour, cream of tartar, salt, baking soda, cinnamon, nutmeg, ginger and cloves. Mix until all ingredients are incorporated.
  3. Line cookie sheets with parchment or spray with cooking spray.
  4. Scoop 2 Tablespoons of dough and roll into balls. Place 2 inches apart on cookie sheet and press slightly down with the palm of your hand.
  5. Bake at 350 degrees F for 10 to 12 minutes. Cool on wire rack.
Caramel Cream Cheese Frosting
  1. In medium bowl, combine cream cheese and powdered sugar and beat until smooth. Add caramel and salt and beat until smooth. Frost cooled cookies.

Breakfast Scones

4 C Flour
2 Tbl Sugar
2 Tbl Baking Powder
1 1/2 C Cold Cut Butter

Mix as little as possible so butter does not fully incorporate

4eggs
1 C cold Cream or Milk
Fold in last

Add generous amounts of fresh or dried fruit.  Roll out as you would biscuits, cut into triangles.  Sprinkle generously with sugar.

Bake at 400 for 10-12 minutes.  Makes 16 scones.

Glaze for 1/2 batch
1 C powdered sugar
1/4 teas vanilla
1/8 teas salt
2 TBL milk

Albanian Baked Apple French Toast

1 Loaf Thick cut french bread
3 eggs
1 1/2 C light cream
1 Tbl Sugar
1 tsp vanilla
1 stick butter
3/4 large cooking apples
1/2 tsp cinnamon
1/2 tsp allspice
1/2 cup raisins

Soak raisins in 1/2 cup warm water.  Melt butter in bottom of 9x13 pan.   Cube apples and mix with spices.  Place in bottom of pan, sprinkle with raisins.  Set aside.  Mix cream, eggs, sugar and vanilla.  Dip Bread in egg mixture and arrange tightly over fruit.  Cover and refrigerate overnight.  Bake at 350 got 35-40 minutes until lightly brown.  Serve with a scoop of vanilla ice cream.

Grandmas's Little Quiche

16 oz small curd cottage cheese
8 oz Ricotta Cheese
3/4 C bisquick
5 eggs beaten
1/2 lb butter
12 oz shredded cheese
6 TBL sour cream

Mix all ingredients and pour well sprayed muffin pans.  Bake at 350 for 30 minutes

Grease 9x13 pan.  Layer with 24 oz good quality hashbrowns (Ore Ida).  Bake at 400 for 20-30 minutes until dry.  

Layer with cheese, filling, then cheese again.  (Add filling of choice: ham, green peppers, zucchini, tomatoes, sausage, broccoli etc.)

Pour 1/3-1/2 c. melted butter over the top

Mix 6-12 eggs, 1/2-1 c cream (or milk), about a teas of seasoning salt (depending on saltiness of the filling), salt and pepper to taste.  Pour on top.

Pazookies

1 C. crisco
1/2 C Sugar
1 C brown sugar
1 teas baking soda
1 teas salt
1 teas vanilla
2 eggs

Whip it good in your mixer for about the amount of time it takes you to put all the ingredients away.

Add 2 1/4 C flour
2 C choc chips

Bake in Ramikins at 350 for 10-12 minutes, top with ice cream

Richard's Salad

1 head lettuce
1 bag spinach
1/4-1/2 purple onion 
3/4 lb swiss
1 lb bacon cooked and crumbled
1/2 lb fresh mushrooms

1 pint cottage cheese, rinsed and drained

Prepare all ingredients - except cottage cheese, mix, cover and chill for 24 hours.  Add cottage cheese just before serving.

Dressing
3/4 TBL poppy seeds
1/3 C white vinegar
1/3 C salad oil
1/3 C sugar
3/4 teas salt
1 teas dried mustard
3/4 teas grated onion

Mix all ingredients thoroughly, cover and chill 24 hours.  Toss with salad just before serving.

Grapefruit Slush



1 15 oz can pineapple tidbits w/ juice
32 oz del monte grapefruit sections in juice 
(usually by mandarin oranges or in the produce section in a jar)
1 jar maraschino cherries

3/4 C sugar dissolved in 1 1/2 C hot water

Mix all together, pour in 9x13 pan and freeze.  

Before serving let it soften a little then chop it up.  Pour 7-up over the top.

Baked Green Beans

One package fresh green beans, from Costco

Steam for 5-7 minutes until near desired tenderness, put in 9x13 pan
Drizzle with olive oil
Top with parmesan cheese, bacon crumbles and pine nuts

Bake at 350 for 15-20 minutes

Chicken Cordon Bleu


Reinventing Chicken Cordon Bleu

We love chicken cordon Bleu at my house, but I hate to pound chicken and think of all the little bits of samoila flying all over the kitchen, so I learned this trick from a friend and thought I'd pass it on. It makes Cordon Bleu a snap even when cooking for an army.
First and foremost make sure you lay everything out in an assembly line. That way you're not running around with chicken disease on your hands.
Next slice chicken lengthwise almost in half.Then layer the ham and swiss in the chicken.Close it up, dip it in butter then bread crumbs.
Actual Recipe....

Make chicken as illustrated. Bate at 400 for 40 minutes.

Top with this sauce that I actually made up. (It's a first, be proud.)

1 can cream of chicken soup
2/3 C. sour cream
Juice of 1/2 a lemon
1/4 teas thyme
1/8 teas Rosemary
Parsley for looks

Mix together then add milk until it reaches desired consistency

Dill Meatballs

1/4 C. Butter
1/4 C Flour
1 tsp dill weed
2 C chicken broth
1/4 tsp salt
1 C sour cream

In medium sauce pan, melt butter, stir in flour, chicken broth, salt and dill.  Cook over med until it thickens.  Stir in sour cream until smooth & thick.  Put meatballs in crockpot.  Pour dill sauce over the meatballs cook on low-med heat for 4-5 hours
